Description
Cos Sicilia Pithos Rosso is a wine that encapsulates the essence of southeastern Sicily. Produced in the Bastonca region of Vittoria, this wine represents tradition and innovation in winemaking. It is made exclusively from the Nero d'Avola grape variety, known for its robustness and ability to reflect the Sicilian terroir. The agriculture used for its production is organic, respecting the environment and guaranteeing the purity of the grapes. The vines, with an average age of 25 years, are located at an altitude of 230 metres above sea level, on a red soil of medium consistency, formed by sub-apennine sands of Pliocene origin, of limestone-siliceous nature. The pruning system used is Guyot, with a planting density of 5,000 vines per hectare.
Elaboration
Harvested by hand at the end of September and beginning of October. Spontaneous fermentation is carried out in terracotta amphorae with indigenous yeasts and in contact with the skins. Ageing is carried out both in amphorae and in the bottle, which makes this wine unique.
Taste
Cos Pithos Rosso is a wine that, although it feels young, has a promising character. When tasting it, a slight effervescence can be perceived on the tip of the tongue, indicating that it needs time for the carbon dioxide to integrate with the wine. Despite this youth, it is an enjoyable wine. On the nose, notes of red currant, blueberry, grapefruit and the bitter white part under the grapefruit skin are prominent. On the palate, it has a pleasant acidity, a characteristic grapefruit bitterness and a fruity finish.
