Eduardo is a young winegrower from Tenerife, son of a local postman who had a small vineyard. His beginnings in the world of viticulture were at an early age, from an early age he approached viticulture under the teachings of his grandfather and father, both of whom were dedicated to making wine in the traditional way.
After graduating in oenology, he moved to Sicily to further his training under the guidance of great winemakers such as Arianna Ochipinti and Passopisciaro. He was also noted for his work as a winemaker with Azienda Passopisciaro, who was one of the pioneering producers of Etna in Italy.
With all these years of training, he acquired over time the necessary knowledge to bottle his own wines and open his own winery. It is worth mentioning that it is located in a very particular area situated on an active volcano, where there is very little population.
Techniques used
Eduardo Torres Acosta is convinced that the use of biodynamic viticulture offers great benefits to his wines, which have qualities that leave no one indifferent, as well as being generous and full of great vivacity.
The essence of his work is reflected both in the vineyard and in the winery, as he focuses on intervening as little as possible to ensure that his wines are a true reflection of the land that gave them birth. In the vineyard, work is carried out according to the indications, always checking vigour and production by means of winter and green pruning.
In the winery, these wines ferment spontaneously and vinification is carried out with minimum intervention. When it comes to bottling and decanting, we follow the lunar trend and everything related to the influence of the moon, the stars and the natural rhythms of the Earth.
Vineyards
Eduardo Torres Acosta has rented a plot of old vineyard in Etna, which has been recovered and cultivated biodynamically. At present, 8 small plots totalling 4.5 hectares are being worked.
The grapes used in each of their wines come from small plots on Etna. Their soils are of sandy volcanic origin, which are treated as authentic jewels. These vines are about 50 years old, with the conviction that the microclimate of the volcano, dry and never humid, is ideal for the healthy and powerful growth of the vines.
Their vineyards are presented as mixed plantations in the purest traditional style. Each of his wines are born from special vineyards, as Eduardo has dedicated himself to gradually restoring the vines, working by hand without chemicals or fertilisers.
