Ausàs Bodegas y Viñedos is located in Quintanilla de Onésimo, a picturesque village in the Ribera del Duero appellation.
The winery was founded by Xavier Ausàs, an oenologist with a distinguished career in the world of wine. Ausàs worked for 25 years at Vega Sicilia and its neighbour Alión, 17 of which were as Technical Director. During this time, he was mentored by the legendary Mariano García, which provided him with an invaluable education in winemaking. In 2015, Ausàs left Vega Sicilia to concentrate on his own project and in 2016 he released his first vintage of Interpretación.Vineyards
Ausàs Bodegas y Viñedos ' vineyards are spread across several locations within Ribera del Duero, each with unique characteristics that contribute to the profile of their wines. The base of their wine comes from Moradillo de Roa, located in the province of Burgos, with vineyards at an altitude of over 900 metres above sea level on gravelly soils, providing freshness and structure. Nava de Roa offers sandy soils that provide finesse and floral notes, while Gumiel de Mercado with clay soils provides concentration and opulence. In addition, La Horra adds power thanks to its calcareous soils.
The climate of Ribera del Duero is continental, with cold winters and hot, dry summers, which allows the grapes to ripen optimally. This diverse terroir and rigorous quality control allow Xavier Ausàs to select the best grapes for his wines.
Philosophy
The winemaking philosophy at Ausàs Bodegas y Viñedos focuses on aromatic purity, freshness and elegance. Xavier Ausàs focuses on obtaining the maximum expression of each terroir, working with winegrowers he has known for decades. The elaboration of his wines includes a manual harvest in crates, selection on the table, vinification by parcels with indigenous yeasts and an ageing of approximately 14 months in French oak barrels, with an increasing presence of 500 litre barrels.
Vinification by parcels allows Ausàs to maintain the identity of each vineyard, blending just before bottling to guarantee the best possible quality. Ausàs avoids the excessive use of wood, preferring that it complements without dominating the aromas and flavours of the wine.
The leitmotiv of the Ausàs project is to create wines that reflect the richness and diversity of Ribera del Duero, combining power with elegance. Its wines seek to stand out for their purity of fruit, fine texture and chalky structure, offering a unique and sophisticated experience to wine lovers.
