Bodegas Paixar was founded in 2001 in the village of Dragonte very close to Villafranca del Bierzo and is attached to the D.O. Bierzo. This is a project born from the union of three referents in the wine scene: the García brothers (sons of Mariano García), Gregory Pérez (now out of the project and producing in Bodegas Mengoba) and Alejandro Luna (from Bodegas Luna Berberide); as it happens with the three owners, the project is based on three legs when it comes to making wine: the first is the vineyard from which they source, vines that are scattered in a multitude of very small smallholdings; the second is the Luna Berberide winery that is used for vinification once the grapes have been harvested and the third is a subway cellar that is located in Villafranca del Bierzo destined for barrel aging.
Paixar is a word that means "highlands", that is where the vineyard is located, between 700 and 900 meters above sea level between oak and chestnut trees, on a steep slope and on slate soils, populated by very old Mencía vines, with planting frames that do not exceed 1.20 m x 1.20 m, with very low yields (no more than half a kg per vine); optimal conditions to seek a late maturity. In total they have an area of 5 hectares and according to Eduardo Garcia, the project aims to produce a wine of the highest quality, not looking for volume since each of the partners already have their own cellars to produce wine in larger quantities. As a result, the only wine produced by the winery is Paixar Mencia, a wine is made based on maximum respect in the vineyard, with the minimum possible intervention and performing a meticulous task in the selection table; then the grapes are cold macerated and then fermented with indigenous yeasts; it is important to note that daily pumping-over is performed. As far as aging is concerned, and as is usual in wineries where the Garcías are involved, there is no defined rule: the time and type of barrel will be defined by the vintage and the origin of the grapes.
Bodegas Paixar produces about 6,000 bottles annually and its first vintage was in 2002.
