History
Before embarking on her adventure in Bierzo, Verónica gained vast experience working with some of the most prominent figures in the wine world. In Priorat, she collaborated with the likes of Daphne Glorian and Álvaro Palacios, two names that resonate strongly in the Spanish wine world. But her passion and thirst for knowledge took her beyond Spain's borders. In France, she worked at renowned wineries such as Domaine de la Romanée-Conti and Comte Armand in Burgundy, as well as at Domaine Combier in Crozes-Hermitage, Rhône. These international experiences gave him a unique perspective and a deep understanding of winemaking, which he would later apply to his own project in Bierzo.
Vineyards
The terroir of Bierzo is special, and Verónica Ortega knows it. With approximately 10 hectares of vineyards under her care, she mainly cultivates the Mencía variety, an autochthonous grape that has found its maximum expression in Bierzo. But Verónica's vineyards are not monochromatic. In them, it is common to find small proportions of other local varieties, both white and red, which add complexity and character to their wines.
In addition to its red wines, Verónica has begun experimenting with the production of ancestral sparkling wines, an ancient technique that is gaining popularity in the contemporary wine world. She has also introduced a new white wine to replace Cal, expanding her portfolio and showing her versatility as a winemaker. In total, she produces around 70,000 bottles a year, a figure that reflects her commitment to quality over quantity.
Philosophy
Verónica Ortega's philosophy focuses on artisanal winemaking and pure expression of terroir. Each bottle is a reflection of the soil, the climate and the passion with which the wine is made. In his winery, intervention is minimal, allowing nature and the grapes to speak for themselves. He uses spontaneous fermentations, which means he relies on the indigenous yeasts present in the environment and on the grapes themselves to ferment the wine. In addition, it keeps sulphur levels low, ensuring a more natural expression of the wine.
In the vineyard, the work is done by hand, following the principles of organic farming. This is not only beneficial for the environment, but also guarantees that the grapes are grown in optimal conditions, free of chemicals and pesticides. In the winery, Verónica combines traditional techniques with modern innovations. She uses a combination of amphorae, old barrels and tanks to ferment and age her wines, always seeking balance and transparency in every bottle.
In addition, Verónica attaches great importance to the date of harvest. In Bierzo, the weather can be unpredictable, and choosing the right time to harvest is crucial. According to Verónica, there is a window of just three or four days in which the grapes are at their optimum ripeness. Harvesting before or after this period can drastically affect the profile of the wine.
