In the heart of Champagne, in a small corner of Mardeuil, hides a winery with a soul of its own: Domaine Aurore Casanova. Just a few minutes from Épernay, it is surrounded by vineyards that look like something out of an Impressionist painting, with rolling hills and rows of vines that change colour with the seasons.
Jean-Baptiste, for his part, also moved away from his family legacy to work in the field of medical prosthetics. But in the end, they both understood that their destiny lay between vines and barrels. In 2013, they founded their own domaine, with the ambition of creating an authentic, sincere champagne with its own identity.
Vineyards
The land that gives life to Aurore Casanova's champagnes is spread over three exceptional terroirs: Puisieulx (Montagne de Reims), this vineyard is a Grand Cru, which already gives us a clue to its quality. It grows mainly Pinot Noir and Chardonnay on hard limestone soils. The result is wines with a mineral tension that electrifies the palate; Mesnil-sur-Oger and Oger (Côte des Blancs). Anyone who loves Chardonnay knows that this is its birthplace. The 22 parcels of Aurore here benefit from chalk-rich soils, which bring an unmistakable freshness and elegance; and Champvoisy (Vallée de la Marne). This is the land of the Meunier, that often underestimated grape which brings a fruity and juicy expression to champagnes. The marl and limestone soils give it a vibrant and enveloping character.
The vineyard is managed with a philosophy that respects nature. There are no synthetic herbicides or insecticides; instead, biodynamics is used. It is more demanding work, but Aurore and Jean-Baptiste believe that the effort translates into more lively and expressive wines.
Philosophy
The essence of Domaine Aurore Casanova can be summed up in one word: authenticity. There are no tricks or gimmicks here, only the desire to capture the truth of the vineyard in every bottle.
Vinification is carried out using a traditional Coquard press, which allows the juice to be extracted delicately. Each cuvée is aged for 11 months in oak barrels, many of them from iconic wineries such as Jacques Selosse and Egly-Ouriet. This step is key: it gives the champagnes a silky texture and impressive aromatic complexity.
In a world where industrial production dominates, Aurore and Jean-Baptiste choose a different path: time, patience and extreme care in every detail. Here, each vintage is a story, each bottle a pure expression of the land.
