Vineyards

The winery works with approximately 4.5 hectares, a relatively small area that reflects the focus on quality over quantity. These vineyards are planted on predominantly gravelly soils on a clay base with limestone inlays, which provides excellent drainage and a distinctive character to the wine.
The climate in Ribera del Duero is extreme continental, with hot, dry summers and very cold winters. The combination of altitude and thermal amplitude favours optimal ripening of the grapes, contributing to the concentration of flavours and natural acidity in Pingus wines.
Since 2001, Peter Sisseck has implemented biodynamic viticulture practices, which has further enhanced the balance and health of his vineyards. This biodynamic approach is fundamental to maintaining the purity and expression of terroir in his wines.
Philosophy
The philosophy of Dominio de Pingus revolves around an absolute respect for nature and terroir. Peter Sisseck believes in minimal intervention in both the vineyard and the winery. One of the main focuses of the project is the reduction of yields in order to obtain grapes of the highest quality. In the vineyards, the vines are carefully pruned, and yields are limited to less than one tonne per 0.40 hectares, allowing the vines to concentrate all their efforts on producing exceptional grapes.
In the winery, Pingus winemaking is simple and non-interventionist. The grapes are fermented in large wooden vats and then aged in barrels, most of them used to avoid an overload of oak flavours. This method has evolved since the first vintages, when a higher percentage of new barrels were used. Today, the aim is to highlight the purity of Tempranillo, seeking wines with elegance and balance, rather than excessive power.
One of the hallmarks of Pingus wines is their ability to combine richness and depth with a finesse and elegance rarely seen in other wines of the same variety. In addition, the winery uses indigenous yeasts and spontaneous fermentation, which allows the wines to faithfully express their origin.
