Bodegas Toro Albalá is the symbol of magical sweet wines of the Spanish gastronomic scene. Founded in 1944 by Antonio Sánchez Prieto, in the village of Aguilar de la Frontera (Córdoba province), this small winery produces exquisite sweet treasures under the Montilla-Moriles designation of origin and it is considered to be one of the 100 Spanish Gold Wineries of the 21st century. There are some other interesting wineries that produce as well sweet Pedro Ximénez wines such as Pérez Barquero and Alvear… because when you set foot on Montilla everything becomes sweet.
La D.O. Montilla-Moriles is created in 1932 and encompasses 17 counties inside Córdoba province that produce still white wine besides fino, amontillado and oloroso, (different Sherry' styles) within the fortified wine range and finally Pedro Ximénez inside the sweet wines classification. Although in Montilla wines are biologically aged under a film of yeasts with the traditional Criaderas and Solera system, the truth is that these wines owe their reputation to the sweet nectars of Pedro Ximénez grapes. When we luckily met Toro Albalá wines, one of the few wineries that have really old Pedro Ximénez wines aged for years fleeing from Criaderas and Soleras… success guaranteed!
But, how are sweet Pedro Ximénez wines produced at Toro Albalá? During the month of September harvest takes place and the clusters are extended on nets in the open air, exposed to the sunlight so the grapes dry and their own sugar is concentrated higher than 450grams per litre. Throughout the time grapes are extended on the net, clusters are periodically turned upside-down to guarantee homogeneous raising process (dehydration). Once in the cellar, grapes are pressed in powerful vertical hydraulic presses that drain the sugary wort.
Let's see which Toro Albalá sweet wines have touched our heart: Don PX , an exquisite sweet wine where honey, quinces and dates are outstanding. The perfect wine to match with blue cheese and vanilla ice cream. Don PX Gran Reserva is absolutely impressive, as we are facing a sweet wine that has oxidative notes combined with coffee, sandalwood, liquorice and spicy nuances. On the palate the sensation is less sweet as its smoothness prevails over the sugar density. A wine you will enjoy with chocolate, candied figs, blue cheeses and desserts as leche frita.
