Winemaking
The winemaking of Tissot Traminer involves a slow press and stainless steel fermentation with indigenous yeasts. Approximately 60% of the wine is aged for 10 months in the same tanks, while the remainder matures in neutral French oak. Malolactic fermentation is completed, and the wine is lightly filtered with a touch of sulphur added at bottling. This careful process ensures the preservation of the freshness and characteristic aromas of Savagnin, while avoiding the oxidative notes often associated with Jura wines.
