The 2021 La Mailloche Chardonnay comes from Arbois, from vines on strong soils of degraded Lias material over limestone, and every time, the wine shows a bitter touch in the finish and very good acidity. In this vintage, the wine is sharper and fresher. All these Chardonnays age in topped-up barrels for two winters, so the 2021s were still in barrel when I visited them in June 2023; but they should be bottled soon to make space for the 2023 crop in a few months.

Description
Tissot Arbois Chardonnay La Mailloche is a dry white wine produced in the Jura, specifically in the Arbois appellation, by the renowned Domaine André et Mireille Tissot. This wine is made from Chardonnay grapes grown on degraded clay loam and limestone soils, located in the La Mailloche plot, one of the most prestigious of the domaine. The vineyard is managed under biodynamic farming practices, certified by Demeter and Ecocert, which guarantees absolute respect for the environment and biodiversity.
Winemaking
The grapes are harvested by hand, ensuring careful selection of the grapes. Once in the winery, the grapes undergo gentle pneumatic pressing and spontaneous fermentation with indigenous yeasts. The wine is aged in 228-litre oak barrels, 30% of which are new, for a period of 24 months on its lees, which contributes to its complexity and depth.
Taste
The taste of Tissot Arbois Chardonnay La Mailloche is characterised by its remarkable minerality and freshness. On the nose, it presents a combination of floral notes, hazelnuts and spices, which develop into an austere and serious aromatic profile. On the palate, the wine shows outstanding concentration and impeccable balance, with lively acidity and a creamy texture that envelops the palate.
