Description
Suertes del Marqués Los Pasitos is a red wine that is classified as fresh, with a balanced aroma denoting the acidity as an element that determines it in the tasting.
It is a wine made with grapes of the Baboso negro variety that come from a single plot, where the intervention of chemical elements is minimal, guaranteeing that its fermentation is not altered.
Winemaking
Los Pasitos is a wine from a vineyard with the same name, located in Tenerife. The grapes from this plot are cultivated using the Cordon Royat Simple method, and then harvested by hand, storing the fruit in small boxes of no more than 16 kg capacity.
After this process, they are transferred to the winery for spontaneous fermentation with native yeasts in open barrels with a capacity of around 600 litres.
However, the second phase of fermentation, known as malolactic fermentation, is carried out in French oak tanks of various capacities. Finally, it is aged for at least 14 months before being bottled without filtration. This process guarantees the particular texture and flavour of this wine.
Taste
Los Pasitos is a wine that lingers long on the palate and is therefore defined as full-bodied and voluminous. Its nuances of ripe fruit with wild herbs achieve the perfect balance on contact with the palate. It is a wine with ripe tannins and spicy touches that add a long mineral finish.
