Fermented with indigenous yeasts and aged on lees in 200, 300 and 500 litre French oak barrels. Malolactic fermentation completed. Addition of 50% of reserve wines for the second fermentation in bottle with a minimum ageing of 30 months and without final dosage (Extra Brut).
Description
Dehours La Croix Joly Réserve Perpétuelle Extra Brut is a unique expression of viticulture and oenology. Grown in the Lieu-dit La Croix Joly in Troissy, this wine comes from old Meunier vines planted on a gentle north-east facing slope. The soil, composed mainly of leached clay with little sandstone, together with very low yields, contribute to the exceptional quality of the grapes.
Winemaking
Making this wine is a real challenge, requiring a complete rethink of every aspect of the process, from plot selection and harvest date to vinification and ageing methods. Meunier, a variety that is completely at home in this region of Champagne, is used in an unusual way to produce a red wine (Pinot Noir being more common for this purpose). The grapes are harvested by hand at the end of the season and vinified by complete maceration of the grapes, fermented and aged in small oak barrels for 24 months, without filtration or fining.

Dehours La Croix Joly Réserve Perpétuelle Extra Brut is distinguished by its richness and complexity. It exhibits an aromatic explosion of ripe fruits such as yellow apple, yellow peach, mango, passion fruit and banana.
