Description
Cota 45 Pandorga Esencia de Pedro Ximénez is a spectacular single varietal sweet wine from the region of Jerez, in Sanlúcar de Barrameda, Cádiz, Andalusia. This wine is made exclusively with 100% Pedro Ximénez grapes from the Carrascal estate, particularly from the La Panesa plot. The grapes grow in Barajuela Albariza soils, about 65 metres above sea level, in a terrain that receives a strong influence from the Atlantic Ocean.
Winemaking
The elaboration of this wine is extremely meticulous and traditional, involving the method of "asoleo" for 10 days, where the grapes are exposed to the sun until they lose about half of their watery volume. Subsequently, the grapes are whole bunch pressed and the resulting must ferments naturally in old 500-litre butts, without temperature control. This process results in a wine with more than 300 g/L of residual sugars and less than 60 mg/L of total sulphites, resting for 12 months in the same butts where fermentation is completed.
Taste
Cota 45 Pandorga Esencia de Pedro Ximénez stands out for its amber colour with orange reflections, and offers a unique sensory experience. The nose of the wine is intensely aromatic, with predominant notes of raisined fruits, quince, ginger and spices. On the palate, its dense, creamy character is revealed, marked by gentle acidity and complex flavours of ripe stone fruit compote, honey and a remarkably long persistence. Its taste profile is comparatively light despite its sweetness, reminiscent of an ice wine but with half the alcohol, making it surprisingly delicious and refreshing.
This wine is a testament to the work and passion of winemaker Ramiro Ibáñez, who has dedicated his career to reviving the winemaking traditions of Jerez and expressing the uniqueness of its terroir. The name "Cota 45" refers to the 45 metres above sea level where Ibáñez believes the best albariza soils are found. His focus on traditional techniques and meticulous attention to detail are evident in every sip of this exceptional sweet wine.
