Description
Bonnardot Chassagne Montrachet is a white wine made exclusively with the Chardonnay variety by the Domaine Bonnardot Winery in the region of Burgundy, France.
The Chassagne Montrachet appellation is located in the most renowned area of white wines in the Burgundy region, Côte-d'Or department.
The Chardonnay grapes come from a vineyard located below the Abbey of Morgeot built in the 12th century by Cistercian monks, in a place called "Les Grandes Terres".
This vineyard is located at an altitude of 227 metres, right in the middle of a slightly sloping hill.
Winemaking
The grapes are harvested by hand at optimum ripeness and on arrival at the winery, they are sorted on the table and then slowly and delicately pressed in whole bunches, with a long maceration.
Alcoholic fermentation is carried out with indigenous yeasts in oak barrels, without sulphur or other additives. The wine is aged for 18 months in oak barrels. Bonnardot Chassagne Montrachet is bottled lightly filtered.
