Pācina is an ancient 10th century monastery surrounded by vineyards, olive groves, fields and wooded areas, located in the Chianti hills in Castelnuovo Berardenga, a few kilometres east of Siena. Its special history dates back to Etruscan times, from which its name derives, derived from Pacha or Pachna, the Etruscan god of wine, equivalent to the Greek Bacchus. Today, Pācina is a farm producing organic wine, olive oil, cereals and legumes.
The Tiezzi-Borsa family has been the happy custodian of this wonderful place for almost a century. Giovanna and Stefano have been the current custodians for 30 years, and together with their children, Maria and Carlo, work to maintain the natural and cultural richness of Pācina.The modern history of Pācina begins in the 1960s, when the family began to manage the estate directly. Since its acquisition in the 1930s, Pācina was the country house of the family living in the medieval town of Siena. In 1972, it became the family home when Giovanna's father, Enzo, decided to move permanently to Pācina.
Vineyards
The estate consists of 65 hectares, of which approximately 11 hectares are dedicated to vineyards. The grape varieties grown are all indigenous to the region: Sangiovese, Canaiolo, Ciliegiolo, Trebbiano Toscano and Malvasia Chianti. There is also a small plot where Syrah grapes are grown. The vineyards vary in age from 5 to 50 years, with some plants much older. The soil on which they are located is the 'Tufo di Siena', typical of the area, a predominantly sandy soil that also contains lime, clay and small rounded pebbles known locally as "ciottoli". Pācina is sheltered to the north by the Chianti hills, but is completely exposed to the sun and wind on the other sides.
Philosophy
Their winemaking and winemaking techniques at Pācina are based on the conviction that what is truly modern is rooted in our ability to follow and encourage natural processes through the considered application of scientific understandings. This allows them to reduce interventions to a minimum. Since the 1980s, they have bottled their wine with minimal intervention in the winery and, above all, in complete respect for the ecosystem. It was with this vision that Pacina was born, using grapes selected from the oldest vines, elaborating in a completely natural process and, finally, avoiding the addition of sulphur dioxide.
