Winemaking
Skin soaking for the first 8 hours. Free run fermented with indigenous yeasts in concrete tanks together with the Sangioviese skins from the previous harvest. Aged for 24 months in 500 litre oak barrels. Bottled unfined, unfiltered and slightly sulphited.
