Pinot Gris is a mutation in the colour of Pinot Noir variety developed at Burgundy. Berry colour varies greatly and are much darker than most of white grapes, getting rosy purple tones to dark red as Pinot Noir. Pinot Gris has early budding and ripening and it is relatively vigorous, but not much productive. Furthermore, Pinot Gris is prone to suffer botrytis cinerea and downy mildew. It has small clusters and berries, even very small ones, with high sugar content and low to moderate acidity.
When the production is not very high and becomes fully ripened it can produce deep coloured wines, quite rich in aromas and poor in acidity so they result flaccid and very fragrant.
In France, Pinot Gris is mainly found in Alsace, being the third most planted variety after Riesling and Gewürztraminer. Pinot Gris wine is intense in peach and apricot aromas, with fume touches and memories of butter and biscuits (especially aged ones). Some fascinating Pinot Gris producers are JB Adam, Trimbach, Weinbach and Zind-Humbrecht.
In Burgundy, Pinot Gris is authorised as complementary variety together along with Pinot Blanc and Chardonnay at the AOC Gevrey-Chambertin and Bonnes Mares for instance.
