Pedro Ximénez is a variety sourced in Andalucía, where it has been planted since the 17th century. Its clusters are big with thick skin grapes of uneven size. It has mid budding and ripening, it is vigorous and fertile, very sensitive to botrytis cinerea and downy mildew but less to powdery mildew. Pedro Ximénez is prone to suffer stereum hirsutum or wood rot, dead arm and termites.
Most Pedro Ximénez vineyards are in the Montilla-Moriles region, in Andalucía. Here the grapes are used to produce fortified wines such as Jerez ones, and also still wines with high alcohol level and low acidity. Their berries are rich in sugar and traditionally dried at the sun to condense its sugars and yield fortified wines deeply sweet. Recommended wineries are: Alvear, Equipo Navazos and Pérez Barquero.
In Jerez, the Pedro Ximénez variety is used for similar purposes but less grown because Jerez wineries can purchase Pedro Ximénez wines in Montilla-Moriles for their blending.
