The 2019 Subtil Finca is pure Xarel.lo from the Serral del Roure vineyard with a little more clay, where the wines have more volume (also used for the Reserva Particular). It refermented with must from the following year from their own vineyards and matured in bottle in contact with yeasts for 37 months. So, they keep the base wine for one year aging in stainless steel and part in oak for one year while waiting for the must from the same vineyard from the following vintage. It's subtle (true to its name), serious, harmonious, a little closed, spicy with a hint of curry. It has a moderate 11.5% alcohol with a pH of 3.3 and 4.7 grams of acidity. With time in the glass, it develops subtle aromas of aromatic herbs, flowers, spices and plants that make me think of a Chartreuse liqueur (from Tarragona!). It has a velvety, textured mouthfeel. It has a seamless palate with very tasty flavors, pungent acidity and very small bubbles. I love it. 16,000 bottles produced.
