Description
Tout Terriblement Macération is a natural wine made by Philippe Brand in Alsace, France. Philippe, who grew up among vines, works alongside his father under the Domaine Brand & Fils winery, which has been dedicated to biodynamic viticulture since 2015, obtaining the Demeter certification. This approach to sustainable agriculture seeks to maintain the natural balance of the soil, without the use of chemicals or invasive techniques.
Elaboration
Philippe Brand Tout Terriblement Macération is made from 100% Gewürztraminer grapes from vineyards located in the "Côteaux du Kefferberg" area, characterised by clay-limestone soils. These vines are on average 45 years old, which contributes to the wine's depth and complexity. Winemaking includes a 14 to 15 day maceration with whole grape skins, usingindigenous yeasts, without filtration or addition of sulphites. Ageing takes place for 8 to 12 months in used oak barrels, which enhances its aromatic characteristics and adds a slight oxidation.
Taste
Philippe Brand Tout Terriblement Macération stands out for its pronounced crisp acidity and its clean, lingering finish. On tasting, notes of orange peel and aromatic spices combine perfectly with its dry character. The tannins are light but present, giving the wine structure without overpowering the aromas of exotic fruits such as lychee. This wine is ideal to accompany spicy dishes or cured cheeses, and it is recommended to serve it slightly chilled to bring out all its aromatic complexity.
