Description
There are stories that are not written with ink, but with patience, soil and a tenacious vision. The story of Pago de los Capellanes begins in the very heart of Ribera del Duero, in Pedrosa de Duero, where the Rodero Villa family, in the 1990s, decided to go back to the roots: to make wine without haste, with absolute respect for the vineyard. But it was not a decision taken out of fashion or marketing; it was a form of quiet resistance to standardisation. When many opted for volume, they chose concentration, identity and old vines.
Pago de los Capellanes Reserva comes from vines that are over 40 years old, in selected plots that stand on deep clay-limestone soils, the kind that don't give anything away and that only offer what is essential if they are respected. There, Tempranillo -or rather, Tinto Fino, as it is called in this area- reaches a tense and elegant expression, marked by an extreme continental climate: harsh winters, summers of relentless sun and nights that are always refreshing, allowing the acidity to be preserved like a treasure.
Winemaking
The grapes are harvested manually and selectively in small boxes so as not to damage the grapes. After a cold maceration, alcoholic fermentation begins in French oak vats, where the extraction is gentle but precise. Malolactic fermentation also takes place in barrels, giving the wine a silky texture from the very first moment.
The Pago de los Capellanes Reserva is aged for 18 months in new French oak barrels, with a medium toasting that respects the fruit without covering it. Each batch is meticulously tasted before the final blend. Once bottled, it rests in the bottle for the time necessary for the wine to refine, calm down and develop the austere complexity that is so characteristic of the house.
Taste
From the first nose, Pago de los Capellanes Reserva is sober, profound. There is no excessive artifice, but rather an elegance that reveals itself little by little: black plum, graphite, a touch of liquorice and the earthy memory of thyme in flower. The oak is there, but perfectly assembled, contributing a note of bitter cocoa, clove and subtle smoke from a smoky, extinguished chimney.
On the palate, the entry is enveloping, almost silent, but soon unfolds with precision: polished tannins, creamy texture, lively acidity. There is tension, but also fullness. Ripe black fruit -blackberries, cherry in liqueur-balanced by mineral notes, a barely hinted saline background that lengthens the finish. The aftertaste is serious, long, with a balsamic and earthy echo that lingers. It is a wine that does not give itself away immediately, that invites you to pause, to enjoy a game dish, to unhurried conversation.
