The top-of-the-range 2019 Cuesta de Las Liebres is pure Tinto Fino from a slope ('cuesta' is the Spanish word for slope), 3.36 hectares planted in 1993 that they only bottle separately in exceptional years. 2019 was a healthy and homogeneous vintage, with ripeness and harmony. It comes from very chalky and white soils. The handpicked grapes fermented in small oak vats with indigenous yeasts, and the wine matured in new 225-liter French oak barrels. The oak is integrated and does not dominate the aromas or flavors, and the wine is serious and harmonious, with elegance and subtleness. It has 15% alcohol and a full-bodied palate with abundant, fine-grained and chalky tannins. 8,000 bottles were filled in May 2022.

Description
Pago de Carraovejas Cuesta de las Liebres is a wine produced in the Ribera del Duero DO and considered an emblem of extreme viticulture. It is only produced in exceptional vintages, such as the one in which the climatic balance allowed for a perfect vine cycle. The winery, founded in 1987, stands out for its focus on quality and authentic expression of terroir. This wine is made from 100% Tinto Fino (Tempranillo) from a 3.36 hectareplot planted in 1993. The vineyard is located at an altitude varying between 850 and 900 metres, on a hillside with a slope of more than 30%, which guarantees uniform sun exposure for all the vines.
The soils are limestone marl, with outcrops of gypsum and calcareous salts, which give a distinctive minerality to the wine. The viticulture is manual and precision, which includes rigorous monitoring of the grape ripening cycle.
Winemaking
In the winery, the grapes go through a cold chamber and a double selection process: first the bunches and then the berries. The must is moved by gravity, avoiding mechanical handling that could alter its quality. Both alcoholic and malolactic fermentations are carried out spontaneously in small wooden vats, respecting the personality of the terroir. Finally, the wine is aged for 24 months in new 225-litre French oak barrels, with extra-fine grain, which gives it a subtle integration of the wood.
Taste
On the nose, Pago de Carraovejas Cuesta de las Liebres displays a complex and elegant profile, with spicy, mineral notes and hints of new oak. On the palate, it is a powerful and structured wine, with fine tannins and a long, lingering finish. The acidity is perfectly balanced, giving it freshness and liveliness. It is ideal to accompany hearty dishes such as red meats and elaborate stews, and its ageing capacity allows it to be enjoyed for many years.
