Description
Matassa Coume de l'Olla is a wine produced by the Matassa Winery founded in the south of France by Tom Lubbe, which has been working with different varieties of indigenous grapes ever since. It is located at 450 to 650 metres above sea level and has a yield of around 3,500 kg per hectare per year.
It is a natural, organic and vegan red wine. It has an alcohol content of around 11% and is made from 34% Garnacha Gris, 33% Garnacha Tinta and 33% Macabeo. It is characterised by its high quality, low sulphur content and the absence of additives in its fermentation.
Winemaking
All the varieties of Matassa Coume de l'Olla are fermented together with indigenous yeasts in concrete tanks. Then, the must-wine macerates with its skins for a period of 10 to 14 days. After fermentation, the wine is aged for 7 to 8 months in used 4-year-old French oak barrels.
Taste
Matassa Coume de l'Olla is an aromatic wine with hints of red fruits, peppery spices, dusty earth and nuances of some peppers. Its flavour has a touch of spicy acidity and light tannins that it balances with citrus flavours. It is well structured, agile and versatile at the table.
