Description
Karnage Kari emerges from the collaboration between Charles Dagand and Stéphane Planche, two wine enthusiasts who decided to pool their knowledge and skills to create something truly special in the Jura region.
Winemaking
The vinification of Karnage Kari takes place in two different tanks. In the first one, half of the whole bunch harvest is placed together with half of the Carignan juice which is pressed directly. This mixture macerates for three weeks. In the second tank, the other half of the whole bunch grapes and the rest of the de-stemmed Cariñena are put in, macerating for 15 days. After this process, the musts from both tanks are pressed and combined, fermenting together in other tanks until bottling in November. It is important to note that this wine is produced without added sulphites, which guarantees a very authentic experience.
Taste
Karnage Kari is a wine that stands out for the essence of Cariñena, with notes of intense strawberry and blueberry. On opening, a slight reduction is perceived which, although present, dissipates with time, leaving a nostalgic trace on the palate. This wine, with its cloudy liquid and lees, reveals an authentic expression. A subtle effervescent touch of residual carbonic evokes a festive and rebellious atmosphere. With a limited production of 675 bottles, every drop of this wine is a testament to the art and passion that Charles Dagand and Stéphane Planche have poured into its creation.
