Winemaking
The winemaking process of Jean Faux Sainte-Radegonde begins with the harvesting of the Merlot and Cabernet Franc grapes, carefully selected by hand.
Once harvested, the grapes are destemmed and placed in stainless steel and concrete tanks, where spontaneous alcoholic fermentation begins. During this process, the sugars present in the grapes will be defined in alcohol, presenting characteristic aromas and flavours.
Subsequently, malolactic fermentation takes place, which softens the acidity of the wine. Finally, Jean Faux Sainte-Radegonde is aged in French oak barrels for 12 months, adding complexity and structure to the wine before bottling.
