Description
Maestro Sierra Pedro Ximénez is an oenological jewel of the Jerez-Xérès-Sherry appellation. This natural sweet wine is made exclusively from the Pedro Ximénez grape variety (100%) and is characterised by its aromatic complexity and its excellent balance between sweetness and freshness.
Winemaking
The winemaking process begins with the harvesting of overripe grapes, which are subjected to the traditional "soleo" method, i.e. the grapes are placed in the sun to concentrate the sugars through dehydration, which also increases their sugar content, reaching up to 300 grams of sugar per litre in the must.
Once the must is extracted, it is first fortified with wine alcohol until it reaches 10 degrees of alcohol. This step is crucial to stop fermentation and preserve the wine's natural sugar levels. Subsequently, during the autumn and winter, the wine is clarified and undergoes a second addition of alcohol, reaching 15 degrees alcohol.
The wine then enters an oxidative ageing process in American oak casks under the soleras and criaderas system, a traditional method of the Marco de Jerez. This system involves the continuous blending of wines of different ages, bringing additional complexity to the final product. Maestro Sierra Pedro Ximénez ages for five years in this system, where it develops its distinctive sweet and deep character.
Taste
Maestro Sierra Pedro Ximénez is a dense, dark mahogany-coloured wine with iodised highlights. On the nose, it displays a complex and intense aromatic range, with notes of dried figs, sultanas, caramel, honey and candied citrus, complemented by delicate spicy notes and hints of toasted almonds.
On the palate, its texture is silky and velvety, with a notable sweetness but well balanced by a freshness that makes it less cloying than other PX on the market. The finish is long and lingering, leaving a pleasant sensation of raisined fruits and hints of bitter orange.
It is ideal for pairing with blue cheeses, foie gras, or even to enjoy on its own as a dessert.
This wine is an excellent example of El Maestro Sierra's ability to combine traditional techniques with oenological excellence, creating a product that not only honours the history of Jerez, but also offers an unparalleled sensory experience.
