Description
Droin Chablis Grand Cru Grenouille is one of the most sought-after wines from the Chablis region of Burgundy. Made exclusively from Chardonnay, a variety that is perfectly suited to the Chablis terroir, it comes from vines that are approximately 60 years old, which contributes to its complexity and depth. These vines are located on a 0.48 hectare plot in deep clay soils on a Kimmeridgian limestone base, characteristic of the Grand Crus of Chablis.
Winemaking
The viticulture used is sustainable, maintaining soil biodiversity through regular ploughing and balanced pest control. The grapes are harvested by hand, allowing a precise selection at the optimum moment of ripeness. The vinification process begins with a gentle pneumatic pressing followed by a natural enzymatic decantation, which lasts between 12 and 24 hours at a controlled temperature of 15°C. Fermentation is carried out with indigenous yeasts, which preserves the purity of the varietal character and terroir. Droin Chablis Grand Cru Grenouille also undergoes full malolactic fermentation, which gives it a rounder texture. The wine is then aged for 10 months, divided between stainless steel tanks (50%) and French oak barrels (50%), 20% of which are new, adding subtle woody nuances and complexity.
Taste
Droin Chablis Grand Cru Grenouille is characterised by a balance between freshness and ripeness. On the nose, it displays aromas of ripe yellow fruits such as apricot, quince and a hint of quince, along with more subtle notes of white flowers. On the palate, it is a broad and round wine, with a solid but elegant structure. The minerality of the Kimmeridgian limestone soil is present, albeit in a more integrated and discreet way compared to other Chablis Grand Crus, allowing the ripe fruit flavours and depth of the wine to shine through. The natural acidity, preserved by the early harvest, brings a balanced freshness, which contributes to its great cellaring ability.
This wine, which reaches a limited production of only 3,000 bottles per year, is a true jewel of Chablis. Its versatility makes it the perfect accompaniment to haute-cuisine dishes such as pan-seared foie gras, prawns and poultry in complex sauces. Droin Chablis Grand Cru Grenouille not only stands out for its elegance, but also for its longevity, as it can age gracefully for decades, developing even more layers of complexity and refinement.
