Disgorged in April 2018 with six grams per liter dosage, the Pinot Noir-dominated 2010 Brut Rosé Grande Sendrée is showing very well, offering up an attractive bouquet of raspberries, wild plums, rhubarb and spices. On the palate, it's medium to full-bodied, vinous and tightly wound, with racy acids, a concentrated core of fruit and a sapid finish. This is a very serious Champagne that's still playing its cards close to its vest, and it will amply repay five or six years patience, even if it can be pleasurably broached sooner.

Description
Drappier Grande Sendrée Rosé comes from a plot called Grande Sendrée named after a land covered by ashes after a fire in Urville in 1836. The winemaking process is meticulous and traditional, using a reproduction of an 18th century bottle found in the Urville cellars. The Grande Sendrée undergoes a completely manual stirring in the cellar, highlighting its craftsmanship and attention to detail.
Winemaking
As for its composition, Drappier Grande Sendrée Rosé is made from 92% Pinot Noir and 8% Chardonnay, a combination that gives it remarkable complexity and elegance. The vinification of this cuvée Rosé is carried out by the saignée method with a maceration that lasts 3 days. Only the juices from the first pressing are used, and a low-pressure mechanical press is employed to preserve the quality of the must. This process is complemented by a minimum use of sulphur, natural decanting, and alcoholic fermentation at low temperature for about two weeks, followed by a total and natural malolactic fermentation. In addition, 35% of the wines are matured in oak barrels from the Tronçais forest for 9 months. After bottling, the cuvée is aged for more than 6 years in the underground cellar.
Taste
Drappier Grande Sendrée Rosé is a symphony of sensations. It has a complex nose that opens with notes of strawberry, raspberry and violets, complemented by toasty nuances. On the palate, it is round and smooth, but with a lively backbone that tautens the entity, recalling red fruits. This Champagne is fresh and complex at the same time, offering remarkable richness and persistence. Ideal to serve as an aperitif, it goes perfectly with dishes such as cream of mussels with saffron, prawn salad or monkfish stew.
