Description
Made from the Chenin Blanc grape variety, the wine Delesvaux Côteaux du Layon St Aubin Les Clos, from the Domaine Delesvaux winery is an aromatic wine produced using biodynamic techniques and only a minimum of sulphite extracted from a volcano is added. It is a fruity and sweet white wine, perfect for tasting with different types of cheese and sharing with close friends.
Winemaking
The natural white wine Delesvaux Côteaux du Layon St Aubin Les Clos is made from 10% Chenin Blanc grapes, which are grown on carboniferous shale and slate soils.
The grapes are hand-picked and harvested by hand, and then undergo a slow Vaslin-type pressing, as well as a 24-hour debourbage. Alcoholic fermentation takes place with native yeasts.
This wine is aged for 7 months on fine lees. Moreover, it is not chaptalised, and is bottled without fining, with minimal filtration and a very low amount of volcanic sulphur, which is why it is certified biodynamically by Demeter.
