Description
Serragghia Bianco Zibibbo wine is a gem from the volcanic island of Pantelleria, located southwest of Sicily, Italy. This island is famous for its capers and for the exquisite wines made from the local Zibibbo grape.
The variety used for this wine is 100% Zibibbo (also known as Muscat of Alexandria). The grapes come from vines about 60 years old, planted on ancient terraces on sandy volcanic soils. These vines are located in one of the highest parts of the island, benefiting from the cool sea breeze and moderate temperatures, even in the middle of summer.
Winemaking
During the reception of the manual harvest in the winery, the grapes are destemmed, pressed and fermented with indigenous yeasts, with a maceration of 20 days in contact with the skins in terracotta amphorae, which Bini buries in its vineyard. The wine is then aged for 3 months in the same amphorae. This process gives the wine a distinctive personality and aromatic complexity. Finally, the wine is bottled unclarified, unfiltered and without the addition of sulphites.
Taste
Serragghia Bianco Zibibbo is a medium-bodied wine with notes of citrus, mango, peach, salt and sea breezes. Light herbal notes are also perceptible. It is a wine that evokes the sea and the mineral richness of the volcanic soils of Pantelleria. It is ideal for pairing with dishes such as grilled salmon with wild asparagus or risotto with saffron.
