The 2020 was not produced because they lost the crop due to mildew, so from 2019, they jumped to the 2021 El Tòfol, a pure Macabeo from a vineyard they own in Font de Juí, in Sant Sadurní d'Anoia. This vintage is different, because they fermented the juice from direct pressing in used 500-liter oak barrels, where the wine matured with lees for nine months with bâtonnage for three months. It has 11.5% alcohol and a low pH of 3.08. It has a clean nose and a fresh palate, with good volume and a serious profile, with balance and potential for aging in bottle. This is not an aromatic Macabeo; it has what they want, which is fresh wines with balance and aging potential. 2,259 bottles were filled in June 2022.

Description
L'Enclòs de Peralba El Tòfol is an exceptional wine that reflects the passion and knowledge of Leo and Roc Gramona, cousins and members of the renowned Penedès sparkling wine dynasty. Launched in 2017, this project focuses on making single plot wines, using local grape varieties to express the microclimate and terroir of each plot. El Tòfol, one of their most outstanding creations, is a clear example of this philosophy.
Winemaking
Made in the Penedés region, known for its diversity of terroirs, L'Enclòs de Peralba El Tòfol stands out for its focus on sustainability and minimal intervention during vinification. The grape used for El Tòfol is Macabeu, an indigenous Penedès variety, planted in a 1-hectare plot in 1969. This plot, owned by Leo and Roc Gramona, is cultivated following biodynamic principles, which contributes to an aromatic, well-structured and nuanced style of Macabeu.
The winemaking process begins with a manual harvest, followed by a crushing and maceration process for several hours before pressing. Fermentation is carried out with natural yeasts in tanks and then transferred to 300-litre French oak barrels where fermentation is completed. El Tòfol is aged for 9 months in these French oak barrels, with weekly bâtonnage, which contributes to its complexity and texture.

Despite not being an aromatic Macabeo, this wine stands out for its freshness and volume on the palate.
